Lunch: Zucchini & potato w/ tomato sauce
I had one poor little white zucchini left in the fridge and it was begging for attention, so I decided to cook it for lunch today. I also cut up some leftover cooked potato from Sunday, and poured some tomato sauce all over it. Perhaps it doesn't look to pretty but it tasted good and that's what really matters! :) /E
Breakfast Porridge
Hi! I've been feeling slightly under the weather this weekend, that's why I haven't posted anything. I invited my parents for Sunday dinner, we had potatoes and meatballs and then for dessert we had my home made ice cream. Both my parents liked it :)
Oh well, breakfast today was an old favorite, porridge! This morning with oats, barley, spelt, buckwheat, millet & some flax and psyllium seeds as usual. Topped of with some lingonberry jam :) It's kinda hard not to be repetative when it comes to porridge haha ;)

Cherry & dark chocolate ice cream!!!
Time to use my ice cream maker for the first time! :D I'll let the pictures speak for themselves ;)
I started with whipping the cream... by hand... Then I chopped some dark (50% cacao) chocolate. I just have to say I love my knife from Zwilling. It cost a bit but it is so worth it, it's a pleasure to cut with it!
TIP: I cut the chocolate on a piece of baking paper so it would be easier to transfer it from the cutting board to the mixing bowl :)
I used some home made cherry jam with whole cherries, and home made cherry cordial. Doesn't this look tasty? (I assure you it was hehe)
Finally putting the mixture into the ice cream maker... And licking the bowl (no picture of that!)
... Now the ice cream is in the fridge, I think I'll have it tomorrow, maybe I'll invite my grandparents over for dinner. Or I'll just eat it all myself haha! :)
2015 Edit: This recipe was made with lactose free dairy back in 2011. I'd love to make this again but then I would use soya whip or something else that is vegan.

Finally!
I took my bike and went to the store... bought some stuff and then I went to the electronics store and got myself an ice cream maker! It must have looked pretty funny when I went home with a big box on the luggage carrier.
The ice block is supposed to be in the freezer for 18-24 hours but I can hardly wait to make my own ice cream! :)
I just had a small sandwich for breakfast, ate lunch in the store, and then I had dinner with my parents, so no food photos today...

My own hummus!
Today I made hummus for the first time!
I used this recipe from Angela at ohsheglows.com . Actually I didn't have all the ingredients (as usual) so I made my own version, which was really tasty anyway! :)
This is the recipe for my version:
One can of precooked kidney beans (about 1½ cups or 250g)
7-8 teaspoons of squeezed lemon
2 drops of Louisiana hot sauce (didn't have any tabasco)
1 small teaspoon of salt, I used mineral salt with less sodium
2 teaspoons of garlic powder, since I didn't have any fresh cloves at home
a little olive oil & paprika powder for decoration :)
I can honestly say that I've never been a big fan of hummus... But this tasted really good! I ate it with some nachos, but then I cut up some carrots to sticks and ate that instead. It tasted SO good with carrots, so I totally recommend it!

Chantarelles!
Hooray, it is chantarelle season!! I went to the stable with a friend, and the stable owners don't eat chantarelles themselves, but they like picking them. So they gave me some :)
I made some toast (didn't have toast bread though but any bread will do) and it turned out really tasty although the smallest mushroom (don't know what type they are haha) got kinda burned.
Have you had any chantarelles or other mushrooms? :) /E

Breakfast: porridge
Oats, rye, blueberries(a few), dried apricots, and sunflower seeds topped of with some dried cranberries. The apricots didn't want to be in the picture, but they're in there somewhere, I promise ;) Having some sunflower seeds in the porridge was wery nice, a bit crunchy but not hard to chew. Sorry about the blog drought!
Hi! Sorry I haven't posted anything in a while... I have been overwhelmed with work and have basically spent my time eating and sleeping inbetween working. No energy left for blogging... But now I have two days off so I finally feel some energy returning :) I will post pics of my food and so, because taking pictures is easy, the hard part is to upload them ;)

Breakfast: porridge
The usual breakfast... Porridge! :)
Today it consisted of spelt, oats, barley, buckwheat, millet, flax seeds and psyllium seeds. Topped with apple sauce. To me apple sauce is the real classic topping for porridge, it's what I always had on my porridge when I was little.

Grapefruit time!
Time for a snack, I figured I might as well try out the grapefruit I bought earlier. It was really good! I've tasted grapefruit juice before that was kinda gross, but the fruit itself was really tasty! Yum!
