Lunch: Zucchini & potato w/ tomato sauce

I had one poor little white zucchini left in the fridge and it was begging for attention, so I decided to cook it for lunch today. I also cut up some leftover cooked potato from Sunday, and poured some tomato sauce all over it. Perhaps it doesn't look to pretty but it tasted good and that's what really matters! :) /E

Breakfast Porridge

Hi! I've been feeling slightly under the weather this weekend, that's why I haven't posted anything. I invited my parents for Sunday dinner, we had potatoes and meatballs and then for dessert we had my home made ice cream. Both my parents liked it :)

Oh well, breakfast today was an old favorite, porridge! This morning with oats, barley, spelt, buckwheat, millet & some flax and psyllium seeds as usual. Topped of with some lingonberry jam :) It's kinda hard not to be repetative when it comes to porridge haha ;)

Cherry & dark chocolate ice cream!!!

Time to use my ice cream maker for the first time! :D I'll let the pictures speak for themselves ;)

I started with whipping the cream... by hand... Then I chopped some dark (50% cacao) chocolate. I just have to say I love my knife from Zwilling. It cost a bit but it is so worth it, it's a pleasure to cut with it!
TIP: I cut the chocolate on a piece of baking paper so it would be easier to transfer it from the cutting board to the mixing bowl :)


I used some home made cherry jam with whole cherries, and home made cherry cordial. Doesn't this look tasty? (I assure you it was hehe)

Finally putting the mixture into the ice cream maker... And licking the bowl (no picture of that!)

... Now the ice cream is in the fridge, I think I'll have it tomorrow, maybe I'll invite my grandparents over for dinner. Or I'll just eat it all myself haha! :)


2015 Edit: This recipe was made with lactose free dairy back in 2011. I'd love to make this again but then I would use soya whip or something else that is vegan.

Finally!

I took my bike and went to the store... bought some stuff and then I went to the electronics store and got myself an ice cream maker! It must have looked pretty funny when I went home with a big box on the luggage carrier.


The ice block is supposed to be in the freezer for 18-24 hours but I can hardly wait to make my own ice cream! :)


I just had a small sandwich for breakfast, ate lunch in the store, and then I had dinner with my parents, so no food photos today...

My own hummus!

Today I made hummus for the first time!
I used this recipe from Angela at ohsheglows.com . Actually I didn't have all the ingredients (as usual) so I made my own version, which was really tasty anyway! :)


This is the recipe for my version:
One can of precooked kidney beans (about 1½ cups or 250g)
7-8 teaspoons of squeezed lemon
2 drops of Louisiana hot sauce (didn't have any tabasco)
1 small teaspoon of salt, I used mineral salt with less sodium
2 teaspoons of garlic powder, since I didn't have any fresh cloves at home
a little olive oil & paprika powder for decoration :)

I can honestly say that I've never been a big fan of hummus... But this tasted really good! I ate it with some nachos, but then I cut up some carrots to sticks and ate that instead. It tasted SO good with carrots, so I totally recommend it!

Chantarelles!


 Hooray, it is chantarelle season!! I went to the stable with a friend, and the stable owners don't eat chantarelles themselves, but they like picking them. So they gave me some :)


I made some toast (didn't have toast bread though but any bread will do) and it turned out really tasty although the smallest mushroom (don't know what type they are haha) got kinda burned.

Have you had any chantarelles or other mushrooms? :) /E

Breakfast: porridge

Oats, rye, blueberries(a few), dried apricots, and sunflower seeds topped of with some dried cranberries. The apricots didn't want to be in the picture, but they're in there somewhere, I promise ;) Having some sunflower seeds in the porridge was wery nice, a bit crunchy but not hard to chew. Sorry about the blog drought!

Hi! Sorry I haven't posted anything in a while... I have been overwhelmed with work and have basically spent my time eating and sleeping inbetween working. No energy left for blogging... But now I have two days off so I finally feel some energy returning :) I will post pics of my food and so, because taking pictures is easy, the hard part is to upload them ;)

Breakfast: porridge

The usual breakfast... Porridge! :)











Today it consisted of spelt, oats, barley, buckwheat, millet, flax seeds and psyllium seeds. Topped with apple sauce. To me apple sauce is the real classic topping for porridge, it's what I always had on my porridge when I was little.

Grapefruit time!

Time for a snack, I figured I might as well try out the grapefruit I bought earlier. It was really good! I've tasted grapefruit juice before that was kinda gross, but the fruit itself was really tasty! Yum!

Porridge for breakfast

Today I wanted to try out a new ecological blueberry jam I bought yesterday (5 mins before the store closed..)


The porridge, listed in order of appearance haha ;)
  • Oats and Barley
  • Spelt and Rye
  • Buckwheat
  • Flax seeds (crushed) and some psyllium
I wasn't too ecstatic about the blueberry jam, but I figure I'm not used to blueberry jam and this one wasn't overly sweet. But I'll get used to it. I try to buy organic/ecological foods because they are often more healthy, and are better for the environment.

Loading up

Good morning! Today my plan is to take my bicycle to work.. I think it will take a while so I figured I better eat some healthy and nutrious grains for breakfast! I topped it with the classic apple sauce, and I thought I should add some cinnamon to go nice with the apple taste... But as you can see I put on a bit too much haha. Sometimes you gotta know when it's enough! :)

The most important meal of the day

I love eating breakfast!! Today I made my porridge as usual, and to give myself a little treat I took some homemade cherry jam I got as a gift from dad. He cooked the jam himself using our own cherries that grow in our (my parents) garden. So yummy! It also felt better to eat than the sugary store-bought kind.

For the porridge I used oats, rye, barley, millet, buckwheat, psyllium & flax seeds.


 My dad is an excellent cook, and loves to fish. So he often cooks up fish he caught himself. (He makes the best smoked salmon ever!!) The thing is, I am the only one who always manages to get a small fish bone stuck in my palate or just finding one in my piece of fish.

Well, today when enjoying my breakfast, I found a cherry stone! Haha it was just so typical! I figured that was the cherry I should have helped to take the cherry stone out of.. That's what you get for not being home and helping out with making jam... I wouldn't be surprised at all if that was the only cherry that still had the stone. I had to call dad to tell him and he thought it was funny as well :)

Breakfast: mixed grain porridge

I love to make porridge with different grains. I also love that it's so easy to make in the microwave. Today's breakfast:



I mixed oats, rye, millet, spelt, buckwheat, some psyllium and a touch of flax seeds :) So yummy!
To top it of, I cut up a pear and drizzled some cinnamon and a tiny amount of fairtrade brown sugar. I really liked it!

I love the look of the mixed grains, it looks so healthy and most of all delicious!

If you make morning porridge, what are your ingredients? Do you have time to cook it on the stove or do you use the microwave like me?

Late night snack/dinner

Yikes, I came home SO late.. And I'm not someone who feels for cooking at 3AM.. So my to go meal this night was some toast with apricot(!) jelly and cheese. Yum! Really easy to make but it's still something warm.


I also made some hot chocolate.. And got the bright idea I'd wisk it with the milk frother. Then when it looked like the chocolate might whip up out of the glass I freaked out and instead of just turning it off I pulled it out. Now that's gotta be one of the fastest ways you could ever get your kitchen and yourself covered in chocolate drops haha! This explains the chocolate stains in the picture... Better luck next time!

Ikea Haul

Okay so here are the cooking/baking related goods I got at Ikea. I have never shopped this much at ikea, haha! Well, I got some good-to-have things for the apartment which I won't list here because my receit was very long, I promise.. ;)
Okay so here's a picture!

  • Cake sheets (to have under the cake, yay)
  • Rolling pin
  • Flexible cutting boards
  • Muffin cups
  • Milk frother
  • Metal tins (I think I might use them as cookie jars!)
  • Glass baking/cooking dish
  • Kettle grill (never thought about what it was called before haha!)
  • Measuring pitcher
  • The weird white wavy thing is for storing spices. You're supposed to put it in a drawer and store the spices there. I don't have much room to store my spices so this way I can fit more into my little kitchen :)
  • And I almost forgot.. I got a nice pair of purple kettle holders so I won't burn my hands when taking cookies out of the oven!
Okay, that's just a few things I got.. Haha good thing I just got paid ;)

Time for bed.. Tomorrow is work day and I'll be working until 1AM on Sunday! That totally sucks... At least it's extra pay to work on a weekend!

Lunch: Pasta and tomato sauce

Inspiration was completely lacking... But then when I opened the pantry the premade tomato sauce and some pasta jumped right at me! Then it felt easier..

Radiatori & full grain fusilli pasta

I started with cooking the pasta since the sauce only needed to be heated up. In the freezer I found some frozen spinach (note to self: thaw it in the microwave or something before putting it in the sauce next time!) i tossed in there as well.

 Then I took some mushrooms and a small bag of corn that I had forgot about (taco leftovers!). After making four lunchboxes I didn't have very much pasta left, so next time I'm making more! The sauce was enough though so I'm glad anyway. To make it a bit extra "festive" I had some mango juice too drink. It's the first time I've had it (It's been sitting in my fridge all summer...) and it taste really good. So, here's a picture of the finished meal:

Grocery haul

I love going to the store. Especially if I have a lot of time on my hands so I really can walk up and down every isle, look at ingredients, compare prices, and remember if there is something I lack in my apartment.
Yesterday I bought some spices I didn't have; Cayenne pepper, Cardamom, Rosemary (want to bake crisp bread with rosemary!), Oregano, Parsley and then a small pepper mill. What could be better than freshly ground spices?

I also got some chocolate chips and peanut butter, which I intend to use for baking. I've never been very fond of just eating peanut butter, but I know preferences can change. I also got a Cherry Coke zero.. I try not to drink sodas, but I've never seen this one before, and with zero calories.. ;)

Last but not least.. I got two large grapefruits! It was 2 for $1.50 so I figured I might as well.. And now I don't really have a clue why I got them. I've never eaten fresh grapefruit before, and I'm not very fond of grapefruit juice haha... Hopefully I'll come up with anything, please tell me if you have any good ideas!

Too tired..

I was going to write a blog post about what I got at the grocery store today.. But it took so much time to make the animation for the "tuna taco" blog so that will have to wait until tomorrow... But I will give a hint.. I got some chocolate chips.

Lunch of the day

 
Yesterday I invited my parents to taco night! Tacos are really easy to make, just fry the ground meat, cut up the veggies you like and heat up the tortillas a bit :) And as usual it gives a lot of leftovers, which is why I'm having taco lunch today. Yummy!

First post!

Hi y'all! Welcome to my blog, and thanks for reading :) I've caught a cold so no work for me today... So what could be better than starting a blog?
I figured I should come up with a list of things I want to learn, so when I find myself all lost in the kitchen (as usual) I can just take a look at this list and do something.
Things I've never done in the kitchen:
  • baked cupcakes
  • make my own jam
  • bake cookies I haven't tried before
Uhm... that's about as much I could come up with! (sad really...)
OK, to be honest, I have cooked before, but baking is really where I'm totally lost! Last time I baked something it was with the help of a cake mix, the "just add water" kind... So baking is really what I want to learn!
Please tell me if you have any good ideas, or if you have a yummy recipe I should try!
The cake is my cousin's wedding cake. They chose to have several smaller cakes instead of one big. It was with chocolate mousse and it was SO good!! I think I could've eaten one on my own if I hadn't had dinner first ;)
